Smoked Cream Cheese Loaded Three Ways

Smoking cream cheese has become quite the trend, and for good reason. It is simple, easy to make, and totally customizable. Though you can season your smoked cream cheese with just about any of our blends, here are three of my favorite preparations loaded with sweet and savory bacon jam, pistachios with a hot honey drizzle, and a crunchy chive and crema topping.

When smoking cream cheese, I like to use cherry wood because it is subtle, light, and sweet. You also want to score the top of the cream cheese blocks to help the smoke penetrate deep.

Ingredients
3 8-oz blocks of cream cheese
-
Sweet Preacher
-
Sweet Peeper
-
Potato Slayer
10 oz of bacon, cut into ½ inch pieces
1 small sweet onion
1/8 cup apple cider vinegar
1/8 cup brown sugar
1-2 tablespoons maple syrup
Honey roasted pistachios, chopped
1-2 tablespoons hot (or regular) honey for drizzle
1 small bag of potato chips, broken into smaller pieces
1-2 tablespoons Mexican crema for drizzle
Fresh chives, finely chopped
Directions
Smoking the cream cheese blocks
Unwrap and place blocks of cream cheese on a medium sheet pan. Cover every side of each block in seasoning; one with Sweet Preacher, one with Sweet Peeper, and one with Potato Slayer. Place in a smoker at 200°F for 1 hour and 30 min.
Making the bacon jam
While you’re smoking the cream cheese, prepare your bacon jam. Heat a pan over medium heat and cook down the diced up bacon until almost completely crisp. Remove from pan.
Leave some bacon grease in the pan and cook down your onion until softened. Next, add the bacon back in, along with the apple cider vinegar, brown sugar, and maple syrup. Cook over medium low heat, stirring occasionally until liquid has reduced.
Assembling
When the cream cheese is done smoking, add your toppings. Top the Sweet Preacher block with bacon jam. Top the Sweet Peeper block with pistachios and honey drizzle. Top the Potato Slayer block with broken potato chips, Mexican crema, and chives.
Enjoy with Triscuits or Wheat Thins.
