The game changer with this recipe is air frying the bites after you’ve smoked them. You get the delicious smoke flavor combined with a crispy bite of BBQ —what more could you need, other than a cold beverage?
Ingredients
-
3 lbs skinless pork belly
-
2 tbsp of Mayor of Rub Town BBQ Rub
-
1 tbsp chives for garnish
-
½ cup of water
-
¼ cup liquid aminos or soy sauce
-
1 tsp cornstarch
-
4 cloves of freshly minced garlic
-
1 tbsp ginger paste
-
½ tsp Honey Garlic BBQ Rub or korean chili flakes
-
½ cup honey
Honey Garlic Sauce
Directions
Cube the 3 pounds of pork belly into 1 inch by 1 inch cubes.
Season the pork belly cubes with Mayor of Rub Town BBQ Rub. Make sure all sides of the pork belly are well-coated, then let it sit for at least 20 minutes. For optimal flavor, season and let it sit overnight.
Indirectly smoke the pork belly at 225°F with cherrywood chunks (or your favorite fruitwood) for 90 minutes.
Create the honey garlic sauce by combining all of the ingredients in a pan and cooking it on medium/low heat for about 10 minutes until it thickens up. When adding in the cornstarch, combine it with 2 tbsp of hot water and mix prior to adding it in the pan with the other ingredients so that it properly dissolves. Be sure to stir the sauce every few minutes to ensure it does not burn in the pan. Once sauce is done, remove from heat and set aside for later.
When the pork belly reaches an internal temperature of 165°F, remove it from the smoker and place it in the airfryer.
Air fry the pork belly at 350°F for about 7 minutes and pull once the pork belly is nice and crispy.
Place the pork belly in a bowl, pour in the honey garlic sauce and toss them so they are well coated.
Serve on a plate, garnish with sliced chives and serve with toothpicks.
