Beef Short Rib Totchos
Bless this mess. Seriously, just look at this pile of divine indulgence. Crispy tater tots, shredded beef short ribs, cheese and chiles come together to create the ultimate party food—TOTCHOS. It’s like nachos but you don't have to worry about soggy chips, which, is a blessing in itself.

Like any of our recipes that use BBQ as a topping, utilizing leftovers is completely okay. You can prepare the ribs a day in advance and pull together the rest of the dish in real time.
Ingredients

2 lbs beef short ribs
-
¼ to ½ cup of Thundering Longhorn Beef Rub
-
2 tbsp olive oil
-
¼ cup BBQ sauce
-
¼ cup water, plus more for topping
-
2 tbsp butter, melted
-
1 bag frozen tater tots
-
8 oz white American cheese
-
2 tbsp canned green chiles
-
¼ cup milk
-
Mexican crema or sour cream
-
Fresh or pickled jalapeño slices

Fresh chives
Directions
Pat dry short ribs and rub each one down with olive oil. Generously season each rib on all sides with Thundering Longhorn.
Place ribs on grill or smoker over indirect heat at 250°F until they reach an internal temperature of 165°F.
In a bowl, mix BBQ sauce, water and butter.
Remove ribs, place in an aluminum foil boat with BBQ sauce mixture. Wrap and place back over indirect heat until ribs reach an internal temperature of 205°F. Remove, cover foil boat with a towel and let rest for 1 hour.
Cook tater tots per directions on bag.
In a saucepan over low heat, combine cheese, green chiles, and milk and whisk until melted together.
Remove ribs from foil and shred.
Assemble the totchos: Tots > Beef > Cheese Sauce > BBQ Sauce > Crema > Jalapeño > Chives.
