
Crispy Oven Baked Lemon Pepper Wings

Dry brining the wings in a combination of Lemon Pepper and baking powder duplicates the best qualities of their fried counterparts: even browning, a crackly-crisp skin, and incredible flavor. Baking wings in the oven is simple, but you can also grill the wings or cook them in an air fryer (see method below). After the refrigerated dry brine, you’ll want to allow the wings to sit out at room temperature for up to 1 hour before cooking. If you grill the wings, grill the lemon half as well to add a smoky flavor to the sauce.

1 tablespoon plus 1 teaspoon Lemon Pepper seasoning

1 tablespoon baking powder

3 lbs chicken wings or drumettes

Juice of ½ lemon (about 2 tablespoons)

2 tablespoons hot sauce (such as Cholula or Louisiana)

3 tablespoons cold unsalted butter, cut into ½-inch cubes
Directions
In a large bowl, whisk together the Lemon Pepper seasoning and the baking powder. Add the wings and toss until evenly coated (for maximum crispness it’s important to distribute the baking powder evenly).
Transfer the wings to a sealable plastic bag and refrigerate for at least four hours or up to a day in advance. Remove the wings from the fridge an hour before you plan to cook.
When you’re ready to cook, heat the oven to 425 degrees and line a rimmed baking sheet with foil. Place the wings in an even layer on a foil-lined baking sheet.
Bake for 20 minutes, then flip the wings, and bake for another 10-15 minutes, until they’re golden brown and crisp. While the wings are baking, combine lemon juice, hot sauce and butter in a mixing bowl large enough to hold all of the wings.
Allow the wings to cool for a few minutes and then place them in the bowl with the butter mixture and use two spatulas to toss until evenly coated; serve immediately.
Recipe Note
Air Fryer Instructions: Air fry the wings at 400 degrees for 10 minutes on one side, flip, and then another 8-10 minutes on the other side until they’re nice and crispy.
