Char-Grilled Crispy Brussels Sprouts
If you don’t like Brussels sprouts, I blame a childhood experience that involved the drab, overcooked variety. If you’re already a fan, then you know sprouts are at their best when they’re cooked quickly, so they achieve a charred, crispy exterior and a just-cooked interior. The sprouts become vibrant green, which makes them super appetizing. Which takes us to the grill: A quick spin over blistering coals delivers charred flavors, the desired mix of tender and crunchy textures, and makes the spices in Potato Slayer sing.

Crispy Slayer Sprouts are delicious alongside grilled steak, chicken, or fish. Other options? Serve them with grilled toasts, a couple of your favorite cheeses, and a tomato salad for an easy peasy summer meal. You can also halve the charred sprouts and toss them with quinoa or couscous (adding additional olive oil and fresh lemon or lime juice) for a healthy salad that will keep 3-4 days in the fridge.

1 ½ pounds Brussels sprouts, trimmed

Olive oil, for drizzling

1 tablespoon plus 1 teaspoon Potato Slayer
Directions
Prepare a charcoal grill for two-zone cooking and build a medium-high fire.
Place the trimmed sprouts in a mixing bowl, drizzle with enough olive oil to lightly coat, and season with Potato Slayer; use your hands to toss until combined.
When the coals are glowing red and covered with a fine gray ash, place a grill skillet or basket over direct heat for 5 minutes. When you’re ready to cook, pour the sprouts into the skillet or basket and shake or use tongs to stir until the sprouts are evenly charred. (Rotate the skillet around the heat as needed for even cooking.)
