Finding perfectly ripe peaches with the correct firmness is key to making the peach petals. Too soft and ripe will jam up your mandolin. Too firm won't allow you to mold them around the pastry.
Ingredients

3 fresh peaches

1 box puff pastry
-
6 tbsp peach jam
-
Hot for Peacher

Non-stick cooking spray
Directions
Preheat oven to 375˚F.
Slice each peach in half and remove the pit. Using a mandolin on the lowest setting, carefully slice peaches in half-moons and set aside.
Unfold each puff pastry sheet and cut each one into 6 even strips. Spread a thin layer of peach jam on each strip, about 1 tbsp.
Layer the peach petals on the top half of each pastry strip, slightly overlapping each other, with the petals slightly hanging off one side of the strip, about ¼”.
Tightly roll each prepared strip and place into a muffin pan lightly coated with cooking spray.
Bake until golden, about 20-25 minutes.

Optional: dust with powdered sugar.
