Pressing your block of firm tofu in advance will create a desirably quick and crispy result. The cornstarch and egg batter further ensures a crispy crust that matches the traditional breaded texture of a fried chicken nugget.
1 block firm tofu, pressed and broken into bite size nuggets
1 egg
½ cup cornstarch
1 tbsp Mayor of Rub Town
Frying oil
½ cup of your favorite BBQ sauce
Heat 1 inch of frying oil in a cast iron skillet to 350°F.
Beat egg in a small mixing bowl. In a separate small mixing bowl, mix cornstarch and Mayor of Rub Town.
In batches, dip tofu nuggets in the beaten egg and then into the cornstarch mixture.
Move battered tofu nuggets gently to hot oil and fry for a few minutes or until golden brown.
Transfer nuggets to a wire rack (for a dry nugget) or toss in a mixing bowl with BBQ sauce and serve immediately.
