Crispy Cheesy Griddle Tacos
Ingredients

1-2 lbs steak and chicken, chopped into bite-sized pieces

1 large lime, juiced

Avocado oil (or any other high smoke point variety)

Fire & Smoke Society Taco Seasoning
-
Onion and bell peppers, sliced thin
-
Shredded cheese, Mexican blend
-
Flour tortillas
-
Your favorite salsa
Directions
In a mixing bowl, combine steak, chicken, taco seasoning (1 packet per pound of meat), lime juice and a swirl of oil.
On a hot, oiled griddle, quickly cook meat. Set aside.
Drop veggies and sauté. Feel free to season with salt, pepper and garlic. Set aside.
Clean and re-oil griddle, then lay down a handful of cheese per taco. Melt for about 30 seconds.
Place tortilla on top of each pile of sizzling cheese. Flip when cheese is crispy but not burnt.
Add meat, veggies and salsa. EAT!
