This simple, satisfying recipe makes the perfect weeknight dinner–and the aroma of the copious amount of herbs sing of spring and summer. Onion Butter seasoning transforms chicken breasts from ordinary to outrageously tasty.
This recipe calls for the breasts to be grilled over a medium fire, but you can also sear them in a skillet or roast them in a 400℉ oven. The noodles and chicken are great served warm, at room temp, or even cold–making this dish ideal for picnics and portable lunches.

4 boneless skinless chicken breasts

Extra-virgin olive oil

1 tablespoon plus 1 teaspoon Onion Butter seasoning

1 pound spaghetti (or other pasta)

Up to 2 cups of fresh herbs (any mix of parsley, basil, dill, chives, tarragon, oregano, etc.)

Freshly squeezed juice of ½ lemon (plus more as desired)

Kosher salt, freshly ground pepper, and red chile flakes, to finish

Directions
Season the chicken breasts with Onion Butter seasoning; set chicken aside to marinate at room temperature while you prepare your grill.
Prepare a grill for two-zone cooking and build a medium fire. When the coals are glowing red and covered with a fine gray ash, grill the chicken over direct heat, flipping every few minutes, until they are firm and springy to the touch and reach an internal temperature of 160 F. Remove the breasts from heat and cover (carryover heat will bring the breasts to 165 F) while you finish the pasta.
Heat a large pot of water over high heat. While you’re waiting on the water, chop (or tear) the herbs and place them in a large serving boil. Boil the pasta in salted water according to package directions (until they’re al dente). Drain the noodles (do not rinse) and place them on top of the herbs. Drizzle the spaghetti with enough olive oil to generously coat (about ⅓ cup) and toss the pasta. Add the fresh lemon juice, a sprinkling of salt, pepper, and red chile flakes and toss again. Taste the noodles and adjust seasonings as desired.
Slice the chicken breasts and place them on top of the spaghetti and serve immediately.
