Royale Smashburgers with Cheese

For obvious reasons, Smashburgers need to be cooked on a flat surface, so you can flatten them with a large spatula. If your grill doesn’t have a griddle attachment, simply, cook the burgers on a large cast iron skillet over direct heat.
These thin patties cook quickly, so have the buns and toppings ready to go before they begin to sizzle. Clean your griddle or skillet beforehand so you’re ready to go!

Ingredients

2 pounds ground sirloin

Burger Royale Seasoning
-
1 medium onion

Vegetable oil (such as grapeseed oil)

8 slices American cheese
-
8 buns (white, soft, squishy)

Sliced onions
-
Sliced pickles
-
Whole grain mustard
Directions
Prepare your grill for two-zone cooking, and build a medium high fire.
While you’re waiting on the fire, divide the ground beef into 8 portions, and then roll each portion in a round (running your hands under cold water as needed makes the meat easier to work with), and place on a baking sheet. Season the top of each meat round with a pinch of Burger Royale seasoning. Set aside.
When your coals are ready, set a griddle over the coals, if you have one, or place a large cast iron skillet over direct heat. Allow the griddle to heat for at least 5 or up to 10 minutes, until it’s very hot. Slice the onion in half horizontally, and then spear it with a long handled fork. Dip the onion into the oil, and then run the onion over the griddle or skillet until it is well oiled.
Bring the sheet pan of meat, cheese, buns and toppings to the grill area. Place 3-4 rounds (depending on size of your cook surface) on the griddle, and then use a large metal spatula to smash them into thin patties. Immediately season the top of the patty with a generous sprinkling of Burger Royale seasoning. (It’s helpful to have another spatula on hand to help press the large metal spatula into the meat).
Cook for 2-3 minutes, until the bottom is deeply browned and has crisp, lacy edges and then flip. Cook the second side for 1 ½ to 2 minutes, until browned, and then place each patty on the bottom bun and top with cheese. Repeat with remaining beef rounds, top each burger as desired and eat!
