Very little effort results in a dangerously addictive snack that’s perfect at Happy Hour, tailgate parties, or backyard barbecues. During the holidays, I make big batches of these nuts to give away as gifts (in Weck jars or metal tins). As long as you use a pound of nuts, feel free to mix up the varieties. Salted roasted pepitas are another great addition. This recipe calls for Honey Garlic, but Sweet Preacher, Pork Perfect, or The Usual are also excellent options. You’ll just want to adjust the heat and sugar to your liking.

1 large egg white

½ cup granulated sugar

1 tablespoon chopped fresh rosemary

2 tablespoons Honey Garlic Seasoning

8 ounces pecan halves

4 ounces salted roasted cashews

4 ounces roasted almonds
Directions
Preheat the oven to 250℉, and top a rimmed baking sheet with heavy duty foil.
In a large bowl, whisk together the egg white, sugar, rosemary, and Honey Garlic. Add the nuts and use a rubber spatula to mix well. Pour the nut mixture onto a cookie sheet. Bake for 40 minutes, stirring occasionally with a metal spatula.
Reduce the heat to 200℉ and bake for another 30 minutes. Remove the nuts from the oven, and use a fork to loosen them from the foil (as they dry you can also lift and crinkle the foil to pop them loose). Cool the nuts completely, and store in a metal container with a tight-fitting lid for up to 2 months.
Recipe Note
If you double the batch, divide the mixture between two baking sheets; the nuts crisp up better if they roast in a single layer.
