The Ultimate Fried Mushroom Sandwich
We’re told mushrooms are magical, but did you know that they’re also the perfect fried chicken substitute? It’s true. Unique clusters of oyster mushrooms provide tons of surface area for our Crispy Coatings to adhere to. As a result, when the mushrooms are fried, they develop a satisfyingly crunchy texture on the outside while remaining tender and juicy on the inside. Land them with a fresh brioche bun and pair with a slather of sweet and tangy sauce to easily rival the best fried chicken sandwiches around.

Whisking buttermilk and pickle juice into the Crispy Coating mix will create a thick and flavorful batter that will help crisp your oyster mushroom into a gorgeous golden masterpiece.
Ingredients

Vegetable oil, for frying

1 box Chica Licka Bam Bam Crispy Coating

1-1 ½ cup buttermilk
-
2 tablespoons pickle juice
-
1-2 oyster mushrooms
-
Dill pickle chips, for topping
-
2 brioche buns
-
¼ cup mayonnaise
-
2 tablespoons honey
-
1 tablespoon yellow mustard
-
2 teaspoons dijon mustard
-
2 teaspoons lemon juice
-
2 tablespoons of your favorite BBQ sauce

1 teaspoon F&S Honey Garlic seasoning
For the sauce
Directions
In a small mixing bowl, whisk all sauce ingredients together and refrigerate.
In a deep cast iron skillet, heat at least 3-inches of oil to 350ËšF.
Place â…“ of the Crispy Coatings in a large bowl. Mix the remaining 2/3 with buttermilk and pickle juice in a separate bowl (mixture should be thick).
In batches, coat each oyster mushroom with the dry seasoning, then with the wet. Make sure you’re separating the oyster mushroom layers carefully and evenly distributing the coating.
Deep fry for 3-4 minutes on each side or until golden brown.
Transfer to a cooling rack lined with paper towels.
Toast brioche buns and assemble your sandwich. Top with pickles and a slather of homemade sauce.
Serve hot with a side of waffle fries.
