Perhaps you, like us, have spent a lifetime searching for a way to incorporate the cheesy goodness of Nacho Cheese Doritos into a recipe. At last, the stars have aligned. For this recipe, we’ve turned nachos upside down by using smoky grilled wings (seasoned with Chica Licka Bam Bam and tossed in buttery hot sauce) as the base. Then the hot wings are showered with crumbled cotija (an aged Mexican cheese with a sharp flavor, like Parmesan), sliced scallions, fresh cilantro–and a generous layer of ground Doritos. The union of saucy, spicy wings + crunchy neon orange topping (universally understood as the color of delicious) results in a BIG GAME snack that will disappear in a flash.
Ingredients

3 pounds chicken wing drumettes

Olive oil

1 tablespoon + 2 teaspoons Chica Licka Bam Bam seasoning

1 cup Nacho Cheese Doritos

â…“ cup hot sauce (such as Texas Pete)

2 tablespoons unsalted butter

Juice of ½ lime, plus more to taste

¼ cup crumbled Cotija cheese

2 scallions, thinly sliced

Fresh cilantro springs, for garnish
Directions
Place the drumettes in a large bowl, drizzle with enough olive oil to lightly coat, sprinkle with Chica Licka Bam Bam seasoning and toss to combine.
Prepare a charcoal grill for two-zone cooking and build a medium-high fire.
While the grill heats, place the Doritos in the bowl of a food processor, and pulse until the mixture is mostly ground (an uneven texture is good); transfer to a bowl.
In a large bowl, combine the hot sauce and the butter.
When the coals are glowing red and covered with a fine gray ash, clean and oil your grill. Place the drumettes over direct heat and cook, turning and rotating around the heat as needed, until nicely browned. Transfer the chicken to the indirect side of the grill, close the grill and vent for smoking, until they’re cooked through and the juices run clear, about 10-15 more minutes.
Place the hot drumettes in the bowl with the hot sauce and butter and toss vigorously. Add the fresh lime juice and toss again. Transfer the wings to a serving platter and top with the Cotija cheese, scallions, and Doritos dust. Garnish with cilantro sprigs (or chop the cilantro and scatter over the top) and serve with additional lime. Serve immediately, with plenty of cold beer.
