The Bánh Mì Burger

Ingredients

Lucky Lucky Sweet & Smoky seasoning

Diakon

1 cup water

1 cup white sugar

1 cup apple cider or rice wine vinegar

Hamburger buns

Mayo

Cilantro
-
Cucumber, thinly sliced

Jalapeños, sliced
Directions
Start by pickling the carrot and daikon. Slice the carrots and daikon into planks and then into match sticks.
Combine water, sugar, and vinegar into a sauce pan. Boil over medium heat until the sugar has dissolved fully, about 3-4 minutes.
Pour over veggies in a jar and let rest for at least 30 min (overnight is best.)
Next combine the ground pork, green onions, and 2 tablespoons or more of the Lucky Lucky seasoning. Mix and let sit for 30 minutes.
While you wait, fire up the grill for two-zone cooking. Once the grill is ready, form your patties and place over indirect heat until the burger reaches an internal of 150°F degrees. Then give the burger a nice sear on both sides.
Last, assemble the burger as follows: bun, mayo, cilantro, cucumber, jalapeño slices, patty, pickled veggies, green onion garnish, and top bun with mayo.
