If there’s a person who doesn’t love crusty bread topped with melted cheese (and plenty of it), we haven’t met them. Two details make this version particularly delicious. First, a mix of three cheese varieties (Mozzarella, provolone and Parmesan) creates a pleasingly nutty and salty depth. Second, a quick garlic oil infused with Vinny R’s Italian seasoning is brushed on the bread before toasting, creating an incredible aroma and the authentic flavors of your favorite spaghetti joint. The result is an oooey, gooey snack that will please everyone at the table. Or, add a bowl of marinara sauce for dipping and call it dinner.
Don’t fret about the mix of cheeses. If you don’t have provolone and Parmesan on hand, you can swap in your other varieties of cheese like Muenster or Pecorino. If you’re feeling crafty, you can also add pesto, sun-dried tomatoes or roasted red pepper slices to the toasted bread before topping it with cheese.
Combine the olive oil, butter, grated garlic and 1 tablespoon plus 1 teaspoon Vinny R’s seasoning in a small microwavable bowl. Microwave in 30 second intervals, stirring in between, until the butter has melted. Stir to combine.
Place the French bread cut side up on a baking sheet. Brush the cut sides with seasoned garlic oil. Bake until the edges are golden, about 5 to 7 minutes.
Combine the cheeses in a medium bowl and toss to combine; divide the mixture between the two bread halves. Return to the oven and bake until the cheese has melted, about 5 minutes.
For a bubbly and browned top, finish the loaves under the broiler for an additional 1-2 minutes. Sprinkle the loaves with the remaining Vinny R’s seasoning and allow them to cool for 5 minutes before slicing and serving.
