Winter Caprese
There’s no need to relegate your favorite Italian starter to summer. Juicy, roasted tomatoes give the classic Caprese a cold-weather makeover (and intensify the sweetness of off-season tomatoes) and create an easy, last minute appetizer or party snack. Best of all, the garlic and Italian seasonings create a delicious oil that pulls all the components together; you’ll want to have plenty of crusty bread on hand to sop it up.

Use this recipe as a general guide and use any variety of small tomatoes that catch your eye, including yellow, small “compari” tomatoes or cherry tomatoes on the stem. Sprigs of fresh herbs are optional, but they look great on the plate and infuse the oil with a delicious perfume.

2 pints cherry tomatoes

4 garlic cloves, smashed

¼ cup extra-virgin olive oil

1 tablespoon plus 1 teaspoon Vinny R’s Italian seasoning

Kosher salt

4 sprigs fresh thyme, rosemary, or oregano (optional)

8 ounces fresh mozzarella (about 1 ball) at room temperature, sliced or torn into large pieces

Crusty bread, for serving
Directions
Preheat the oven to 400°F. Toss the tomatoes, garlic, olive oil, and Vinny R’s seasoning on a rimmed baking sheet to coat and season lightly with kosher salt. Spread the ingredients in a single layer and roast until tomatoes are bursting and lightly browned, 30-35 minutes.
Slice or tear the mozzarella and arrange on a large plate. Place the tomatoes over the cheese and drizzle the seasoned oil over the top. Sprinkle it with additional salt, as desired, and serve with bread.
