Chicken thighs are preferred over chicken breast in this recipe because they have a higher fat content and a far more tender texture. The fat in chicken thighs not only adds flavor, but it also keeps the meat moist and juicy during cooking.

Homemade Ranch
Directions
In a bowl, combine all of the ingredients for the homemade ranch and mix thoroughly. Store in a glass jar until ready to use.
Heat a griddle over medium-high heat. Add the chopped chicken and bacon to the griddle and season with The Usual. Cook for about 8 minutes, stirring every 2 minutes.
Push the chicken and bacon to one side of the griddle and add the peppers and onions to the other side. Sauté for about 5 minutes, then combine the meat and peppers and onions into one pile.
Top the meat and pepper mixture with cheddar and mozzarella cheese. Once the cheese is melted, mix everything together and form two separate piles the size of your bun.
Place a hoagie bun on top of each pile, then use a long spatula to flip the mixture onto the bun, creating a sandwich.
Drizzle homemade ranch on top of each sandwich and sprinkle with chopped chives. Serve immediately.
