Juicy Meatball Subs
Mama Mia! Meatballs are in the recipes of childhood memories. It’s the only meat shaped like a ball, the same shape of the planet we eat on. Meatballs and spaghetti created the world famous kiss between two dogs in Lady and the Tramp. Fun fact: my favorite Swedish furniture chain IKEA serves over one billion Swedish meatballs every year. There’s even a movie called Meatballs but my mom probably wouldn’t let me watch it.
Here’s the controversy: most people think you need to sear meatballs before they go in the sauce. It’s not necessary. We like to throw our meatballs in raw. Cooking the meatballs in the sauce makes them more tender. They’re easy to make, just roll these ingredients into balls and let them simmer in some sauce for a while. It’s a delicious, protein dense meal that promises no one leaves hungry.

In this recipe, we make the world-classic Italian meatball sub. Pro tip: make your own sauce at home. It’s easy and it makes a difference. All you need is some good Italian seasoning (we recommend our Vinny R’s Italian seasoning) and two big cans of crushed tomatoes from the store. You don’t have to pre-cook the meatballs, just drop them in the simmering sauce raw and let them cook there. Give it about an hour and you will be in meatball sub heaven.
Ingredients

2 slices white bread, torn into small pieces

½ cup whole milk

½ pound ground pork

1 pound ground beef

1 medium yellow onion, minced

4 garlic cloves, minced

2 large eggs
-
⅓ cup chopped fresh parsley

3 tablespoons Vinny R’s Italian seasoning

2 tablespoons salt
-
1 tablespoon pepper
-
3 tablespoons extra-virgin olive oil

1 cup yellow onion, minced

1 clove garlic, minced
-
Two 28-ounce cans of crushed tomatoes

2 tablespoons Vinny R’s Italian seasoning

Salt and pepper, to taste

Hoagie rolls

Provolone cheese slices

Mozzarella cheese, shredded

Directions
With a stand mixer or by hand in a large bowl, combine all meatball ingredients.
On a sheet pan, form meatballs a little larger than golfballs. Chill in fridge while preparing sauce.
In a large pot over med-high heat, add oil and Vinny R’s seasoning. This toasts and “opens up” the herbs. About a minute later, add onions and garlic and sauté for about three minutes. Add cans of crushed tomatoes, then salt and pepper, to taste. Bring to a simmer.
Drop in meatballs and simmer until they are completely cooked through and sauce has reduced to your desired thickness, about an hour.
Cut bread open and remove some of the inside to create a landing zone for the goods.
Build as follows: Bread, provolone slices, meatballs and sauce, shredded mozzarella, and more Vinny R’s. Broil to melt cheese and EAT.
