Smoked Pork Belly a.k.a. White Brisket
What is White Brisket? Is it another new rapper with face tattoos? It’s actually pork belly. Have you ever smoked a slab of pork belly like a brisket? It takes about half the time and probably half the cost. A regular brisket may take you 10-16 hours, but this smoked pork belly gets done in under five. And the pork belly is juicier, fattier, and perhaps tastier than your dad’s brisket, as long as you use the right BBQ rub.
Pigs are smart, probably as smart as dogs and have been used for hundreds of years to hunt truffles underground and keep us fed. Luckily for us, their bellies make a fine meal. Often associated with bacon or ramen, people forget pork belly is delicious on its own. Angry fans in the comments might tell you it’s just smoked thick cut bacon, but doesn’t that sound delicious?
