Bruce’s Buffalo Wings

This recipe comes from Bruce Butler, our resident Bill’s fan and graphic designer at Fire & Smoke Society. Bruce spent “six very formative years” in Buffalo, NY. But, it wasn’t until he moved to Denver and became a dad that he and his wife Jamie became hard core football fans. “We spent every weekend on the couch watching football, just to survive.” On a recent trip out east, Bruce went to Bar Bill, the storied tavern and buffalo wing institution in Aurora, NY. “Wings are obviously huge in Buffalo. The way Bill’s fans take pride in their wings and pizza is something special.” When he returned home he got to work replicating their sauce.

Dry brining wings in a combination of Chica Licka Bam Bam and baking powder duplicates the best qualities of their fried counterparts: even browning, a crackly-crisp skin, and incredible flavor. Serve the saucy wings in Bar Bill fashion, with crispy celery sticks, blue cheese dressing, and cold beer.
